Is there some way to validate that data has been entered in the correct format (specifically, I want to make sure the date format is yyyy-mm-dd for my mySQL database)? Currently, if a user inputs the wrong format the date is saved as "0000-00-00" and there isn't a warning that the change wasn't able to be made. Thanks!

No - you can't really do that. However take a look at the mce_cal extension in the CVS. That allows you to put a button by date fields that pops up a calendar. The user clicks it and the date gets put into the field in the correct format. You'll need to use the CVS version of PME as well.
